Make the almond mixture. In a medium skillet, heat oil and brown the almonds lightly. Drain on a paper towel. Once they are cool, coarsely grind the almonds. Place in a medium bowl and combine with sugar and cinnamon. Set aside.
Remove the cooked chicken quarters with a slotted spoon; set them aside to cool. Discard the cinnamon sticks. Over high heat, bring the cooking liquid to a boil, uncovered. Reduce the sauce until all the liquid evaporates. Meantime, remove all the bones and skin from the chicken quarters, shred the meat, and set aside.
